a simple & savory brunch.

if you are anything like us over here at beach papery,
you are already planning out your Easter brunch.

everything needs to be done.
the centerpiece. the table decor. the menu.
all fun things to plan, but can also be overwhelming at times.
and that is why we are here.

the talented yun stanton, 
owner of our beach papery shop,
is a pro when it comes to whipping up beautiful & simple events.
yun is blessed with an unbelievable gift of style.
and her passion for design is evident in her every word.
yun has designed a simple & savory Easter brunch that anyone & everyone can pull off.
not only will it be a breeze to throw together, but your guests will be amazed.


isn't this the most darling brunch set up you have ever seen?

start with any type of table cloth you fancy.
we chose yellow & white checked. 
don't worry about making the layout perfect,
a planned rumple-ness is ideal.


yun took bunches of kale to create our centerpiece.
we love using fresh & natural elements to create beautiful designs.
to recreate this look simply hop on over to your local market 
& pick up bunches of your fave greenery.
place them in a vase with water.
voila!

yun added an extra touch by placing fresh white eggs in the bottom of the vase.
how cute and impossibly simple is that?!
you will wow your guests with a centerpiece that took less than five minutes.
{if you are not brave enough to make this on your own, call the shop.

now here is the best part of it all.
planning a breakfast brunch can be quite tricky.
& even more so if you have a bunch of hungry mouths to fill.
how do you ensure that you have enough hot food to feed everyone at once?
have we got a trick for you!

the most appropriate & delicious Easter brunch food,
eggs in a nest.


not only are these little nests so stinkin cute,
but they are also a breeze to make.
baking these will ensure that you have an abundance of warm & delicious food.
no risk. no worries. no empty tummies. 


this recipe is great because it can be catered to your personal likings.
we made our very simple with minimal ingredients, and they tasted divine.
{i may or may not have eaten three this morning}

start by purchasing wonton wrappers from your local grocer. 
you can find these chilled in the produce section.
also pick up some non-stick spray, eggs,  & grated parmesan cheese.
anything else you would like to add is entirely up to you!

pre-heat your oven to 375.
spray a muffin tin with your non-stick spray.
melt 2 tablespoons of butter.
layer on wonton wrapper in each muffin tin.
using a pastry brush, lightly brush a bit of melted butter on each wonton.
then, on a diagonal, layer a second wonton wrapper in each tin.
you should see eight little points sticking up in each muffin tin. 
again, lightly brush a little melted butter on the top layer of wontons.
crack an egg in each wonton "nest."
sprinkle a bit of parmesan cheese on top.
sprinkle salt & pepper. 
and pop the tray in the oven for about 15-20 minutes,
depending on how well baked you prefer your eggs.
we served our little nests in individual ramekin dishes
and added a sprig of basil leaves. 
delicious! 

the fun part is making this recipe your own.
feel free to add brie, peppers, bacon, spinach, etc.  
whatever sounds good to you will work.
